I am not a fan of spinach, but I have learned to enjoy it in a wonderful salad called Warm Goat Cheese and Spinach Salad. This recipe is from his cookbook, on Greens. Specializing in American Cooking, Greene did much to bring our own cuisine back to its proper status.
1/2 pound fresh goat cheese (chevre)

Many times, a salad is the only way to get your family to eat greens. In the South, these salads usually are enjoyed with ranch or Thousand Island dressing. For a change, why not serve the salad with my Fresh Dill and Cucumber Vinaigrette? Yes, it is but when tasted, the thought of just seems to vanish. Once when this was served at a food demonstration, a gentleman said we could keep the salad and just give him the dressing with a spoon.

It is sometimes difficult to get people to try foods that are green. Do you ever wonder if they actually don't like the taste of the food or if they just don't like the color green?
When given a choice of gelatin, I know very few people who would pick lime. Perhaps this would change if they tried the following Lime Congealed Salad that a friend shared with me many years ago. When reading the recipe, I am sure you will be shocked to see that it says to whip a can of evaporated milk. Believe it or not, it works. In fact, that was the only kind of cream I had when I was growing up. Be sure to have the can of milk, the beaters and the bowl well chilled.
This salad is one of the best I have ever eaten. The fresh spinach is topped with goat cheese (warmed in olive oil and flavored with thyme); crumbled, crisp bacon; toasted hazelnuts; and a dressing made with hazelnut liqueur. Hazelnuts are not always available, so you could use another nut of choice, but the hazelnuts really make it special.
Cut the goat cheese into eight equal pieces. Place them in a shallow bowl and drizzle with 1/4 cup of the oil. Sprinkle with thyme. Cover and refrigerate overnight. Remove goat cheese from refrigerator 1 hour before serving.
Place the spinach in a large bowl. In a medium bowl, whisk the mustard with the tarragon, liqueur, vinegar, egg yolk and salt. Slowly whisk in the remaining 1/2 cup oil. Add pepper to taste. Pour over spinach; toss well. Place 2 tablespoons oil marinade from cheese in a large, heavy skillet over medium heat. When hot but not smoking, add the cheese pieces, lifting them with a slotted spoon. Saut 30 seconds per side. Add to salad; sprinkle with bacon and hazelnuts. Serves 4.
