BROOKINGS, SD Two teams of students from Brookings High School are headed to a national competition in Baltimore next month after taking top honors in the 2012 South Dakota ProStart Competition.
Chef Kyle Adams of Sanford Medical Center in Sioux Falls agreed, saying he sees two huge benefits to the program.

In the management division, teams made detailed presentations on the steps they would take to open a restaurant, including layout, decor, staffing, menu, and marketing.
Brookings HS Wins State Culinary And Management Competition
Matthew Sachen of Brookings High School received the President Award from South Dakota Chapter of the American Culinary Federation in recognition of his leadership skills during the competition.

"Number one, it builds dedication to do the studying and do the practicing and to do the work. That takes dedication. So when they do go out into their careers, they already have that good base and foundation of dedication," Adams noted. "Number two is it puts them in kind of a real environment. They in competition, they amongst their peers. They being put into a challenging situation, which in the industry you face all the time."
The competition is an opportunity for students to put to the test the skills they learned in class and on the job. The judging teams were impressed with what they saw.
Joline Dunbar, instructor for the winning Brookings teams, also pointed to the program applications beyond high school.

Coleen Keffeler, instructor for the Sturgis Brown High School team, said the program is also fun for the students.

"The benefit of ProStart is that it real life skills that they will actually take into their careers and use, and you can get better than that," said Dunbar. "I see ProStart as a stepping stool to get them a little big better prepared for Nike Vapormax White And Gold the next level. The students that go into post secondary culinary with ProStart under their belt will just fly."
"The competition in general teaches a great deal of responsibility, as well as time management skills," commented Ethan Litwiller of Huron High School, who won the Chicken Fabrication Skills Award in the culinary portion of the competition. "You have to cram three courses into an hour, and you get the experience of making the gourmet side of food. Every kid knows how to make mac and cheese. Not every kid knows how to make a gourmet three course meal."
"It a great chance for kids that normally wouldn work together to work together, become a team, and more importantly become friends, and be proud of what they do," she said.
"The ProStart program is designed for management of a restaurant and for the culinary aspect of it," Sachen noted, "but it also teaches you more than that. It teaches you team building skills, and if you wanted to run any type of business it teaches you the management skills for that."
McIntosh High School student Jason Bunn summed up what it was like to compete in the culinary division.

In both divisions, top chefs and foodservice industry professionals from throughout the state watched closely, grilled the students, and scored them on their skills.
2012 South Dakota ProStart Competition Results

The ProStart competition is part of a high school curriculum that was developed by the National Restaurant Association Educational Foundation, and is used in 47 states. It blends classroom learning and training with mentored on the job experience, and teaches students both culinary and business skills. In South Dakota, the program is coordinated by the South Dakota Retailers Association, in cooperation with the South Dakota Department of Nike Vapormax Black Blue
"You have to keep reminding yourself that these kids are only in high school, and they doing things that are way beyond that," marveled Chef Mark Mancuso of LaMinestra in Pierre. "They learning knife skills, communication skills, being able to talk in front of a public audience, being able to compete under pressure, following strict guidelines."
The ProStart Competition is an intense, fast paced event, with teams vying for state titles in a culinary division and a business management division. This year event was held March 20 at Mitchell Technical Institute new Campus Center.
